Everyone loves a good pasta dish and this Creamy Coconut Curried Pasta recipe is one of my favorites. Pasta is a common staple in my cupboard and I often utilize it in one pot dishes. This is simply because it’s versatile and makes for a quick meal on an afternoon when I’m feeling tired. There is a wide variety of recipes that have pasta as the main ingredient.  This is due primarily to the wide variety that is available on the market and also their affordability. Like most pasta recipes, this Creamy Coconut Curried Pasta is as easy to make as it is tasty.

The recipe makes for a healthy meal as it includes a good balance of protein, starch, and vegetables. There is also some saturated fat which primarily from the coconut milk. The curry spices add a very nice, fragrant flavor to the dish. There is no way we can have a Coconut Curried Pasta without the coconut. Since I live in the tropics, coconuts are some of the easiest things to come by. The milk can be bought in the local shops, in a can or in sachets as a powder. It is the coconut milk that gives this dish its creaminess as well as added flavor.

Pasta Dishes  Can Be Tailored To Suit Your Taste

There is also the addition of green beans, which adds a crunch to every bite as well as color. The great thing about these dishes is that they can be tailored to suit your taste. That is why I also added canned salmon to this recipe. It is easy to manipulate the ingredients and still maintain the deliciousness. Instead of salmon, you could use shredded chicken or the protein of your choice. You could also omit the meat altogether and add more varieties of vegetable. I  thoroughly enjoyed preparing and eating this meal and I hope those who are reading will also enjoy it.

Ingredients

Instructions
  1. Place a large pot with lightly salted water on medium to high heat and bring to a boil.
  2. Add the shell pasta and allow them to cook until aldente. This may take approximately 8-10 minutes. Remove the pot from the heat, drain the pasta and set it aside.
  3. Pour some oil into a large skillet and allow it to warn up over medium heat. Add the curry power, onion scallion, pepper, garlic, green beans and saute for 1-2 minutes
  4. Add the coconut milk and allow it to come to a boil. Season with salt and to taste, then add the pasta.
  5. Allow the liquids to reduce and thicken to form a creamy sauce, then reduce the heat to low.
  6. Using a fork, roughly flake the the salmon and fold into the pasta. Allow this to warm through for an additional minute and then remove from the heat and serve.
